Equipment

  • 1 High speed blender

Ingredients
  

  • 1 cup red lentils
  • 3 cups water

Instructions
 

  • Rinse the red lentil a couple of times to clean the lentils
  • Soak the lentils for at least 4 hrs then drain.
  • Add the lentils with the 3 cups of water to a high-speed blender
  • Transfer the blended mix to a pot and bring to a boil. reduce heat and stir until the mixture thickens to a smooth paste.
  • Pour the mixture into a glass or silicon container. Move to the fridge with out a lid on to allow to cool and set. The longer you leave it to set the firmer the tofu. I left it overnight then airfried before adding it to a stirfry.
  • Now treat the lentil tofu like any other tofu, cut into squares, marinade, air fry, or saute .. use in poke bowls, stirfries or on their own as a snack.
