Red Lentil Tofu

Red Lentil Tofu is a simple, soy-free, nut-free, and gluten-free protein alternative made with just two ingredients: red lentils and water. Affordable and easy to prepare, it’s a budget-friendly option for a variety of diets.

- 1 cup red lentils
- 3 cups water
Rinse the red lentil a couple of times to clean the lentils
Soak the lentils for at least 4 hrs then drain.
Add the lentils with the 3 cups of water to a high-speed blender
Transfer the blended mix to a pot and bring to a boil. reduce heat and stir until the mixture thickens to a smooth paste.
Pour the mixture into a glass or silicon container. Move to the fridge with out a lid on to allow to cool and set. The longer you leave it to set the firmer the tofu. I left it overnight then airfried before adding it to a stirfry.
Now treat the lentil tofu like any other tofu, cut into squares, marinade, air fry, or saute .. use in poke bowls, stirfries or on their own as a snack.
