Exploring the benefits of WFPB Living: Cath and Shayne’s journey

After being vegan for a period and having tried “almost everything else”, Cath and Shayne Jeffares took up whole food plant-based eating a little over four years ago and haven’t looked back since.

Together, the Hawke’s Bay-based couple have actively organised several local community events. Cath formerly ran her own café, and Shayne, a professional photographer, has been heavily involved in Foto Fest – a visual extravaganza that attracts hundreds to the area.

We caught up with them on Zoom over a recent holiday weekend. They were parked up in their caravan (nicknamed Betty White) in Palmerston North on their way to Wellington. Apart from the break, the reason for the stopover was to pick up a puppy, a replacement for a long-term pet that had passed away after 17 years.

Cath has been running health-focused cooking classes and has obtained public funding for this work. She loves doing it but, because of funding stipulations, is always wary of the need to keep things broadly based and not ‘push’ any set way of eating or eating pattern.

I found this fascinating because the question we almost all face after eating this way for a while is, why wouldn’t anyone else want to eat the same way, too? Or why aren’t all doctors automatically recommending it to their patients? Heck, why don’t they treat their patients this way?

Perhaps it’s a problem of perception. Here’s the first part of the discussion we had with them.
