Simple Saag Aloo – Spinach and Potato Curry

This Simple Saag Aloo is everything we love about whole‑food cooking: humble ingredients, gentle spices, and a slow-building warmth that feels grounding and deeply nourishing. Baby potatoes turn tender and creamy, spinach cooks down into a silky, vibrant sauce, and the aromatics—fresh turmeric, ginger, garlic, and onion—create a fragrant base that feels both comforting and restorative. The spices bloom in the pan, the tomatoes bring acidity and body, and the final dish lands as a cosy, earthy curry that’s perfect for any night of the week.
