Mung Bean Egg Strips

Mung bean egg strips are soft, golden ribbons made from blended mung beans, creating a nourishing, protein‑rich alternative to traditional egg strips. Their gentle savoury flavour and tender bite make them a natural fit across everyday meals — from sandwiches and salads to fried rice, wraps, and warm bowls. They also carry the nutritional strengths of legumes: fibre for gut health, plant protein for satiety, and phytonutrients that support long‑term wellbeing.

These strips become even more versatile when cooked with herbs, aromatics, and spices. Fresh parsley brings brightness and pairs beautifully with sandwiches and wraps, adding vitamin C and antioxidants that support immune function. Chives and spring onion offer a subtle “eggy” lift while contributing prebiotic fibres that feed beneficial gut bacteria. Coriander and basil add fragrant, leafy freshness and deliver polyphenols linked to reduced inflammation.

Aromatics like garlic and ginger deepen the flavour and enhance health benefits. Garlic contains allicin, known for cardiovascular support, while ginger adds anti‑inflammatory compounds that help digestion — ideal for bowls, stir-fries, and fried rice. Finely diced onion or shallot adds natural sweetness and quercetin, a powerful antioxidant.

Spices such as turmeric, smoked paprika, cumin, and white pepper transform the strips into globally inspired variations. Turmeric’s curcumin offers anti‑inflammatory support; smoked paprika adds depth without added salt; cumin brings warmth and digestive benefits; and white pepper enhances savoury dishes like fried rice or noodle bowls. A small pinch of black salt (kala namak) can be used if an egg‑like aroma is desired, though the strips remain flavourful without it.

Finely chopped vegetables fold seamlessly into the batter, boosting both texture and nutrition. Spinach adds folate and iron; capsicum brings vitamin C and natural sweetness; grated carrot or zucchini adds moisture and beta‑carotene; and mushrooms contribute umami and B‑vitamins. These additions make the strips more substantial and help them integrate effortlessly into salads, grain bowls, and stir-fries.

A touch of lemon zest brightens the flavour for fresh dishes, while a teaspoon of tahini or miso whisked into the batter adds creaminess, calcium, and gut‑friendly fermented compounds.

Whether tucked into a sandwich, tossed through a salad, folded into fried rice, or added to a warm lunch bowl, mung bean egg strips offer a nutrient‑dense, whole‑food way to elevate everyday meals. They’re adaptable, satisfying, and aligned with a low‑salt, whole‑food plant‑based lifestyle — making them a reliable staple for anyone wanting to add protein, colour, and vitality to their cooking.

For years my work lived mostly behind the scenes in account management and web development. But at home, family life nudged me toward a deeper awareness of what we were cooking and why it mattered. As I embraced whole‑food plant‑based living, I found my voice — moving from the technical world into one where food, health, and everyday joy intersect. Now I blend my analytical background with a growing desire to advocate for simple, honest, nourishing food, encouraging others to rethink their relationship with the kitchen and reclaim their wellbeing one meal at a time.
