Mung Bean Egg Mix

A nourishing, whole‑food alternative to traditional eggs, this mix is made from soaked split yellow mung beans (moong dal) blended with water, kala namak, turmeric, garlic, onion powder, and a touch of tapioca or cornstarch for extra binding. When cooked, it transforms into a silky, golden batter that behaves remarkably like eggs—whipping into omelettes, setting into quiches, and folding into scrambles with ease.

What makes it special

This mix is made entirely from whole-plant ingredients, giving you the familiar comfort of egg‑based dishes with the clean nutrition of legumes and spices.

For years my work lived mostly behind the scenes in account management and web development. But at home, family life nudged me toward a deeper awareness of what we were cooking and why it mattered. As I embraced whole‑food plant‑based living, I found my voice — moving from the technical world into one where food, health, and everyday joy intersect. Now I blend my analytical background with a growing desire to advocate for simple, honest, nourishing food, encouraging others to rethink their relationship with the kitchen and reclaim their wellbeing one meal at a time.
