Courgette Bake
Ingredients
- 6 courgettes (zucchinis)
- 2 tbsp lite soy sauce
- 1 cup wholegrain breadcrumbs
- 1 tbsp nutritional yeast
- 1 tsp italian mixed herbs
- 1 tsp garlic powder
- soy buttermilk to baste
Instructions
- Preheat oven to 200℃ (400℉)
- Half the courgettes lengthways, then score the inside flesh, making lengthwise cuts to the end, followed by diagonal cuts.
- Drizzle with soy milk, then bake in the oven for 15 minutes.
- In a small bowl, combine the crumb, yeast, herb and garlic powder.
- Remove the courgettes from the oven and baste them with the buttermilk, then sprinkle over the crumb. Place back into the oven for a further 15 minutes or until the courgette is soft and the crumb is golden.
- Serve immediately with your choice of potatoes and vegetables.
