Courgette Bake

Courgette Bake is a delicious and comforting dish featuring layers of tender courgettes (zucchini) baked to perfection with crumbs, herbs, and spices. This bake becomes a flavourful and satisfying meal or side dish.
It’s a perfect way to enjoy seasonal vegetables while providing a hearty, wholesome option that can be served warm or at room temperature. Ideal for a quick weeknight dinner or a potluck, Courgette Bake is both nutritious and versatile.

Servings 4 servings

Ingredients
  

  • 6 courgettes (zucchinis)
  • 2 tbsp lite soy sauce
  • 1 cup wholegrain breadcrumbs
  • 1 tbsp nutritional yeast
  • 1 tsp italian mixed herbs
  • 1 tsp garlic powder
  • soy buttermilk to baste

Instructions
 

  • Preheat oven to 200℃ (400℉)
  • Half the courgettes lengthways, then score the inside flesh, making lengthwise cuts to the end, followed by diagonal cuts.
  • Drizzle with soy milk, then bake in the oven for 15 minutes.
  • In a small bowl, combine the crumb, yeast, herb and garlic powder.
  • Remove the courgettes from the oven and baste them with the buttermilk, then sprinkle over the crumb. Place back into the oven for a further 15 minutes or until the courgette is soft and the crumb is golden.
  • Serve immediately with your choice of potatoes and vegetables.
