Air-Fried Oyster Mushrooms with Tofu Sweet Chilli Dipping Sauce

Ingredients
  

Air-Fried Oyster Mushrooms

  • 1 cup oyster mushrooms
  • 1 cup soy buttermilk
  • 1 cup pinto crumbs
  • 1 cup wholegrain breadcrumbs
  • 2 tsp smoked paprika
  • 2 tsp garlic powder
  • 2 tsp mixed herbs
  • 1 tsp onion powder
  • 1 tbsp nutritional yeast

Tofu Sweet Chilli Dipping Sauce

  • 320 grams soft tofu
  • tbsp sweet chilli sauce
  • 2 tbsp peanut butter
  • 1 tsp apple cider vinegar
  • 1 tsp lemon juice

Instructions
 

Tofu Sweet Chilli Dipping Sauce

  • Combine all the ingredients into a high speed blender and blend until smooth. Place into the fridge to set while the mushrooms are cooking

Air-Fried Oyster Mushrooms

  • In a bowl, blend the crumbs, herb, paprika, garlic and onion powders and the nutritional yeast.
  • In a separate bowl pour in the buttermilk.
  • Pat dry the oyster mushrooms, coat them in the buttermilk mix, then move them to the crumb mix and completely coat again. Finallly place the mushrooms into the airfryer basket. This might need to be two batches depending on the size of your airfryer.
  • Cook for 15 minutes at 180℃ (350℉) turning the mushrooms at the halfway point.
