Half the courgettes lengthways, then score the inside flesh, making lengthwise cuts to the end, followed by diagonal cuts.
Drizzle with soy milk, then bake in the oven for 15 minutes.
In a small bowl, combine the crumb, yeast, herb and garlic powder.
Remove the courgettes from the oven and baste them with the buttermilk, then sprinkle over the crumb. Place back into the oven for a further 15 minutes or until the courgette is soft and the crumb is golden.
Serve immediately with your choice of potatoes and vegetables.
