Red Lentil Flatbread – only two ingredients!

This easy, gluten-free flatbread is rich in protein and fiber, making it a wholesome addition to your meals. It’s a delicious way to elevate your eating experience with natural ingredients!

Servings 8 servings

Ingredients
  

  • 1 cup red lentils (split or whole) rinsed and drained.
  • 2 cups water

optional extra ingredients

  • 1 tsp curry powder
  • 1 clove garlic
  • 1 tsp turmeric and some ground pepper

Instructions
 

  • Combine the lentils and water into a medium bowl and loosely cover. Leave to stand on the bench for at least one hour.
  • Now here is the trick, do not drain out the liquid just pour it all into a blender and blitz until smooth.
  • Heat a nonstick frying pan on medium.
  • Pour around a 1/4 cup of the batter into the centre of the pan and use a metal spoon to spread the batter into a circle (around 15 cm).
  • Cook until bubbles appear and the surface seems dry, then flip. Cook for a further minute.
  • Transfer to a rack to cool and repeat until all batter is used.
  • Can be eaten immediately or stored in a sealed container in the fridge for up to a week.
