Red Lentil Flatbread – only two ingredients!
Ingredients
- 1 cup red lentils (split or whole) rinsed and drained.
- 2 cups water
optional extra ingredients
- 1 tsp curry powder
- 1 clove garlic
- 1 tsp turmeric and some ground pepper
Instructions
- Combine the lentils and water into a medium bowl and loosely cover. Leave to stand on the bench for at least one hour.
- Now here is the trick, do not drain out the liquid just pour it all into a blender and blitz until smooth.
- Heat a nonstick frying pan on medium.
- Pour around a 1/4 cup of the batter into the centre of the pan and use a metal spoon to spread the batter into a circle (around 15 cm).
- Cook until bubbles appear and the surface seems dry, then flip. Cook for a further minute.
- Transfer to a rack to cool and repeat until all batter is used.
- Can be eaten immediately or stored in a sealed container in the fridge for up to a week.
