Red Lentil Flatbread - only two ingredients!

Enjoy the simplicity and nutrition of Red Lentil Flatbread, made with just two ingredients: red lentils and water! This easy, gluten-free flatbread is rich in protein and fiber, making it a wholesome addition to your meals. It’s a delicious way to elevate your eating experience with natural ingredients!
- 1 cup red lentils (split or whole) rinsed and drained.
- 2 cups water
optional extra ingredients
- 1 tsp curry powder
- 1 clove garlic
- 1 tsp turmeric and some ground pepper
Combine the lentils and water into a medium bowl and loosely cover. Leave to stand on the bench for at least one hour.
Now here is the trick, do not drain out the liquid just pour it all into a blender and blitz until smooth.
Heat a nonstick frying pan on medium.
Pour around a 1/4 cup of the batter into the centre of the pan and use a metal spoon to spread the batter into a circle (around 15 cm).
Cook until bubbles appear and the surface seems dry, then flip. Cook for a further minute.
Transfer to a rack to cool and repeat until all batter is used.
Can be eaten immediately or stored in a sealed container in the fridge for up to a week.
