Wonderful easy muffins to create moist, sweet and tasty snacks to have with a nice cup of your favourite green tea.

These are very easy to make and have the added bonus of no dairy, egg or oil yet full of flavour and packed with fibre.

Stored in an airtight container and can last for days if your family doesn’t find them first.  Double the batch and freeze some for later. 

Cinnamon Apple Oat Muffins

Ingredients

  • 1 1/2 cups oat flour or Rolled oats blended into fine flour.
  • 1 cup rolled oats
  • 1 1/2 tsp ground nutmeg
  • 1 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 2 1/2 tsp baking powder
  • 1 cup plant-based milk ( I used oat milk)
  • 1 cup apple sauce (unsweetened)
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup diced apple

Instructions

  • Preheat oven to 180°C (350°F).
  • Blend 1 1/2 cups rolled oats in food processor until you have a smooth flour consistancy.
  • Add all dry ingredients to a bowl (oat flour, rolled oats, spices and baking powder. Then in a seperate bowl whish together all wet ingredients. (plant-based milk, apple sauce and vanilla).
  • Mix the wet ingredients into the dry mix until smooth. Then allow to sit for 10 mins to let the oats expand.
  • Finally fold in diced apple into the batter. Place mixture into 12 evem muffin trays .
  • Bake for 25 minutes.
