Cinnamon Apple Oat Muffins

Ingredients
- 1 ½ cups oat flour or rolled oats blended into fine flour
- 1 cup rolled oats
- 1 ½ tsp ground nutmeg
- 1 ½ tsp ground cinnamon
- ½ tsp ground allspice
- 2 ½ tsp baking powder
- 1 cup plant-based milk (I used oat)
- 1 cup unsweetened apple sauce
- ¼ cup maple syrup
- 1 tsp vanilla extract
- 1 cup apple, cored and diced
Instructions
- Preheat oven to 180°C (350°F).
- Blend 1 ½ cups rolled oats in food processor until you have a smooth flour consistency.
- Add all dry ingredients to a bowl (oat flour, rolled oats, spices and baking powder). Then in a separate bowl whish together all wet ingredients. (plant-based milk, apple sauce and vanilla).
- Mix the wet ingredients into the dry mix until smooth. Then allow to sit for 10 mins to let the oats expand.
- Finally fold in diced apple into the batter. Place mixture into 12 even muffin tray cups.
- Bake for 25 minutes.
