Whole Food Pikelets

Delight in our Whole Food Pikelets, a deliciously fluffy and nutritious twist on a traditional favourite! These pikelets are made with wholesome ingredients, including plant milk (soy), water, malt vinegar, and vanilla essence, creating a rich, flavorful, dairy-free base.

Our recipe uses wholemeal flour for added fibre and nutrients and apple sauce for natural sweetness and moisture. Topped with baking powder and a dash of cornflour (cornstarch), these pikelets achieve the perfect light and airy texture.

Pikelets are believed to have originated in Wales, known historically as ‘bara pyglyd.’ This delightful treat has earned the nickname ‘poor man’s crumpet’ due to its humble beginnings, as it was crafted by those lacking the resources to afford crumpet rings. Instead, the batter was dropped freely into a hot pan, resulting in a uniquely charming and delicious pancake-like treat.

We’ve perfected the recipe to convert traditional dairy pikelets into a wholesome, vegan delight that retains all the airy texture and flavor you love. Ideal for breakfast or a snack, these pikelets are a guilt-free treat you’ll want to savor!

Ingredients
  

  • 1 cup plant milk I used soy
  • ½ cup water
  • 1 tsp malt vinegar
  • 1 tsp vanilla essence
  • cup wholemeal flour
  • ¼ cup apple sauce
  • 2 tsp backing powder
  • 1 tbsp cornflour (cornstarch)

Instructions
 

  • Combine all ingredients in a large bowl.
  • Using a nonstick pan, add small spoonfuls of the batter to the pan. Flip once bubbles have popped, and you can easily slip a spatula underneath.
  • Cook oposite side for a further 2 mins then remov
  • Repeat until the mix is used.
  • Enjoy with a dollop of homemade jam.
