Chickpea Chocolate Chip Cookies are a delicious and nutritious twist on a classic cookie recipe. They are one of our favourites, and as you can see from the photo above, they didn’t have time to cool before they ended up in Peter’s workshop. Made with chickpeas and oat flour instead of traditional wheat flour, these cookies are packed with plant-based protein and fibre to satisfy you.
The main ingredient, chickpeas, is a type of legume that offers a wealth of health benefits. They are an excellent source of protein, containing about 15 grams per cup. This makes them a fantastic choice for vegans, vegetarians, and those looking to increase their protein intake from plant-based sources. Chickpeas are also high in fibre, which promotes digestive health and can help stabilize blood sugar levels.
In addition to protein and fibre, chickpeas contain a variety of essential vitamins and minerals. They are a good source of folate, iron, phosphorus, and magnesium—all important nutrients for overall health and well-being. The cinnamon in the recipe also provides antioxidant and anti-inflammatory properties.
The cookies’ sweetness comes from pure maple syrup, a natural sweetener that contains beneficial nutrients like manganese and zinc. Oat flour replaces traditional wheat flour, providing more fibre and a nutty flavour. Dark chocolate chips add a rich, indulgent element while contributing beneficial antioxidants.
With a soft, chewy texture and just the right amount of sweetness, these Chickpea Chocolate Chip Cookies make a satisfying snack or healthier dessert option. Packed with plant-based nutrition, they are sure to curb your sweet cravings in a nutritious way. Enjoy them as an afternoon pick-me-up or an after-dinner treat that won’t derail your healthy eating goals.
