Savoury Almond Crusted Tofu

This recipe is deceptively simple and built on whole foods. It delivers big flavour and a satisfying crunch, along with plant-powered nutrition. Extra-firm tofu becomes a canvas for a golden almond crust. It transforms into crisp, savoury slabs that elevate salads, bowls, wraps, and snack plates with almost no effort. The recipe feels indulgent, yet it stays true to a WFPB, low-salt lifestyle. Additionally, it relies on nutrient-dense ingredients and smart technique rather than oil. Heavy seasoning is avoided.

Ground almonds create the signature crunch. They add heart-healthy monounsaturated fats, vitamin E, and minerals such as magnesium that support energy production and muscle function. Nutritional yeast brings its beloved umami depth along with B‑vitamins, including naturally occurring folate, which plays a role in cellular repair and metabolism. Garlic powder and smoked paprika add aromatic warmth and antioxidants, while tofu provides complete plant protein, calcium, and iron—all essential for strength, bone health, and steady energy.

As the tofu bakes, the almond coating crisps into a nutty, savoury shell that contrasts beautifully with the tender interior. The result is a texture-rich, flavour-forward protein that supports satiety, stabilises blood sugar, and fits seamlessly into everyday meals. Baked without oil, the recipe stays light while still delivering that irresistible crunch factor.

Whether you’re topping a vibrant salad, building a nourishing bowl, or prepping a quick protein for the week, this almond‑crusted tofu offers a wholesome, versatile option that celebrates whole ingredients and simple cooking. It’s proof that plant‑based eating can be both deeply satisfying and nutritionally robust — a perfect fit for anyone wanting more crunch, more flavour, and more goodness in their meals.

Ingredients

  • 1 block extra-firm tofu sliced into slabs
  • ½ cup ground almonds
  • 1 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 tbsp unsweetened plant milk

Instructions

  • Preheat oven to 200℃ (400℉)
  • Pour the milk into a bowl that can take the size of the individual tofu easily.
  • In a second bowl combine the ground almond, nutritional yeast, garlic powder and smoked paprika.
  • Dip the sliced tofu slabs into the plant milk, then coat thoroughly in the seasoned ground almond mixture.
  • Lay out the coated tofu on a tray lined with a parchment sheet or silicone baking mat
  • Bake in the preheated oven for 25 minutes, flipping halfway through.
  • Serve warm from the oven.

Notes

The 4 most effective non‑stick tricks (WFPB‑friendly)

  • Use a silicone baking mat (best option). Almond coatings release cleanly from silicone because it flexes slightly as the tofu cools. This is the most reliable oil‑free method.
  • Pre‑heat the tray with the parchment already on it When the parchment is hot, the tofu’s coating sets faster and is less likely to fuse to the paper.
  • Bake on a wire rack placed over a tray Air circulates underneath, preventing sticking entirely and giving you a crisp underside.
  • Let the tofu cool 5–10 minutes before lifting Almond crusts firm as they cool. Trying to move them immediately is when tearing happens.

Extra tweaks that help

  • Lightly dust the parchment with almond meal A thin sprinkle creates a barrier without adding oil.
  • Avoid overly wet batter If your plant milk makes the coating very runny, add 1–2 tsp more ground almonds or nutritional yeast so the crust sets faster.

For years my work lived mostly behind the scenes in account management and web development. But at home, family life nudged me toward a deeper awareness of what we were cooking and why it mattered. As I embraced whole‑food plant‑based living, I found my voice — moving from the technical world into one where food, health, and everyday joy intersect. Now I blend my analytical background with a growing desire to advocate for simple, honest, nourishing food, encouraging others to rethink their relationship with the kitchen and reclaim their wellbeing one meal at a time.
