Tremendous Tabbouleh
Ingredients
- ½ cup bulgar
- 1 cup cucumber diced
- 1 cup tomato diced
- 3 bunches curly parsley finely chopped
- ⅓ cup mint finely chopped
- ⅓ cup spring onion finely sliced
- ½ cup red capsicum (bell pepper) diced
- ½ lemon juice only
- 1 clove garlic minced
Instructions
- Soak the bulgur as per packet directions. Drain and set aside to cool
- Combine the cucumber and tomato in a medium bowl. Stir, then let it rest for 10 minutes.
- Add the parsley, mint, spring onion and capsicum to a separate bowl and mix them through.
- Drain the cucumber and tomato, then add them to the other ingredients, along with the garlic.
- Squeeze on the lemon, taste it, and add more if necessary.
