Red lentil patties are a delicious and nutritious plant-based dish made from cooked red lentils, spices, and herbs to form savoury patties. Packed with protein and fibre, these patties are perfect for a quick meal or snack. They can be pan-fried, baked, or grilled, offering a delightful texture and flavour that's great on their own or served with dips, salads, or wraps. Ideal for vegetarian and vegan diets, red lentil patties are a wholesome option for anyone looking to enjoy a tasty, meat-free meal.

Ingredients
  

  • 1 cup red lentils dry
  • 1 cup vegetable stock or water
  • 1 red capsicum (bell pepper) diced
  • 1 med brown onion diced
  • 2 cloves garlic minced
  • ½ cup wholemeal flour
  • 1 tbsp gound flaxseeds (linseeds)
  • 2 tbsp nutritional yeast
  • 3 tbsp fresh parsley chopped
  • 1 tsp smoked paprika
  • 1 tsp cumin powder
  • ½ tsp turmeric powder
  • 6 tbsp wholewheat breadcrumbs
  • 1 med carrot
  • ground pepper and red chilli flakes

Instructions
 

  • After rinsing the lentils, place them into a pot with the stock or water. Bring to a boil, then simmer for 15 minutes or until the lentils are soft (but not falling apart) and the liquid has evaporated.
  • Meanwhile prep all the vegetables. Add the garlic and onion to a nonstick frying pan with a little water, gently fry over low to medium heat until the onions are translucent.
  • Combine all the ingredients into a food mixer and blend, occasionally scrapping the sides.
  • Add the mix, a large tablespoon scoop at a time, to the frying pan that is preheated to the point that if you drop water into it, the water evaporates immediately. Press the mix into patties. Cook on one side for around three minutes, then flip and repeat.
  • Serve with a green salad or in a burger.
