Celeriac Slaw

Celeriac Slaw offers a range of health benefits, starting with the main ingredient: celeriac. This vegetable is an excellent source of dietary fibre, which aids in digestion and promotes feelings of fullness. It is also low in calories and contains essential nutrients such as vitamin C, potassium, and phosphorus. Vitamin C supports the immune system, while potassium helps maintain healthy blood pressure levels. The fibre content in celeriac can assist in maintaining a healthy weight and support regular bowel movements.

The Tofu Mayonnaise used in this recipe offers a healthier alternative to traditional mayonnaise with several potential health advantages. Mori-Nu silken tofu is a high-protein, low-fat ingredient that provides all the essential amino acids the body needs. It also contains calcium, iron, and other minerals. The use of lemon juice, garlic, apple cider vinegar, and Dijon mustard not only enhances the flavour but also contributes to health benefits. Lemon juice is rich in vitamin C and is an antioxidant, while garlic has antibacterial and antiviral properties. Apple cider vinegar may help with digestion and blood sugar control. By using tofu mayonnaise, you can enjoy the creaminess of traditional slaw while incorporating the nutritional benefits of tofu and the added immune-boosting properties of garlic and lemon juice.

The Slaw component of this recipe has additional health benefits from its fresh ingredients. Green apple and carrot add a vibrant and crunchy texture to the slaw while providing nutritional value. Green apple is a good source of dietary fibre and contains antioxidants and vitamin C. Carrots are rich in beta-carotene, which can be converted to vitamin A in the body and is essential for vision health. Fresh dill not only lends a refreshing flavour to the slaw but also offers potential antioxidant and anti-inflammatory benefits. Ground black pepper adds a burst of flavour while potentially aiding in digestion and acting as an antioxidant. Overall, this celeriac slaw provides a nutritious combination of fibre, vitamins, minerals, and antioxidants, making it a healthy addition to your meal.

Background experience is in Account Management and Web Development but as my passion has grown for WFPB so has my desire to speak out.
