Whipped Tofu and Lemon Broccoli Bites

Bright, Creamy, and Nourishing

These vibrant bites combine the rich, velvety texture of whipped tofu with the zesty freshness of lemon-glazed broccoli for a satisfying, plant-based treat that’s as wholesome as it is flavorful.

Fresh broccoli florets are lightly glazed with a savoury-sweet blend of miso paste, maple syrup, garlic, nutritional yeast, and fresh lemon juice and zest, then roasted until tender-crisp. This glaze not only brings a bright, umami depth, but also enhances broccoli’s natural flavour while packing in antioxidants, gut-friendly probiotics (from miso), and vitamin C from the lemon.

The creamy whipped tofu base — made from firm tofu blended with garlic, miso paste, nutritional yeast, and a splash of fresh lemon juice — offers a protein-rich, dairy-free alternative to traditional spreads. It’s silky yet light, brimming with plant-based protein, calcium, and essential amino acids while being low in saturated fat.

Finally, a garnish of crushed raw cashews and refreshing spring onions adds crunch, healthy fats, and a fresh aromatic lift, making each bite a perfect harmony of textures and flavours.

Whipped Tofu and Lemon Broccoli Bites are light, flavorful appetisers made with creamy, seasoned whipped tofu paired with zesty, lemon-infused roasted broccoli. Perfectly balanced between tangy and savoury, these bite-sized treats make a fresh and healthy snack or party starter.
Course Appetizer
Servings 4 servings

Ingredients
  

  • 1-2 heads broccoli

Glaze over broccoli

  • 1 tbsp miso paste
  • 1 tsp maple syrup
  • 1 clove garlic minced
  • 2 tbsp lemon juice and zest
  • 1 tbsp nutritional yeast
  • ground black pepper

Whipped Tofu

  • 300 grams firm tofu
  • 2 tbsp lemon juice and zest
  • 1 tbsp nutritional yeast
  • 2 cloves garlic
  • 1 tbsp miso paste
  • ½ cup water

Garnish

  • 2 tbsp crushed raw cashew nut
  • spring onion

Instructions
 

Whipped Tofu

  • Remove any excess water from the packed tofu.
  • Place all ingredients into a blender and mix to combine.
  • Transfer to a small bowl and place in the fridge to set while prepping the broccoli

Broccoli and lemon glaze

  • Steam or mircowave the broccoli so that it is eldenta but not too soft.
  • In a large frying pan, add all the glaze ingredients and bring them to a simmer.
  • Add the broccoli and gently saute until coated and heated through.

Presentation

  • On four flat serving plates, spoon a large amount of the whipped tofu. Using the back of the spoon spread the tofu around the plate for form a large circle.
  • Gently move the broccoli onto the plates and pour the glaze over them.
  • Optionallly – Garnish with chopped cashews and spring onion.
