Roasted Pear with Cashew Cardamom Cream

First published in the Spring issue of the Whole Food Living magazine, this Roasted Pear with Cashew Cardamom Cream is a sophisticated dessert that combines the natural sweetness of oven-roasted pears with the luxurious creaminess of cashew cream infused with aromatic cardamom. Delight in this refined yet wholesome treat that captivates the senses with every delectable bite.

Ingredients
  

  • Cashew Cardamom Cream
  • 4 medium ripe pears
  • 2 tbsp maple syrup
  • 1 tbsp lemon juice
  • ½ vanilla bean
  • 1 tsp cardamom
  • ¼ cup water

to serve

  • 4 dried apricots finely diced
  • ¼ cup raisins
  • ¼ cup walnuts finely diced

Instructions
 

  • Preheat oven to 180°C.
  • Mix the maple syrup, lemon, and cardamom in a bowl.
  • Cut the pear in half, remove the inner core and soak in the syrup.
  • Place the pears face down in an oven-proof dish. Pour the remaining syrup over the pear, and add water to the bottom of the dish.
  • Roast for 20 minutes, then turn the pear over and baste it with the pan juices. Continue to roast for a further 20 minutes.
  • To serve, spoon the cashew cream evenly over four plates, place two pears each on top of the cream and sprinkle with the apricot, raisin and walnut mix.
