Plant-Based Alphabet Soup
Ingredients
- 1 litre hot water
- 4 tsp vegetable stock
- 1 tbsp honey
- 3 tbsps alphabet pasta shapes or animals – that's all I could find
- 1 med brown onion diced small
- 1 celery stick diced small
- 1 carrot peeled and grated
- 1 potato peeled or scrubbed & diced small about one cm cubes
- 1 tomato diced small
- 2 tbsp parsley chopped
Instructions
- Put the hot water in a large pot (2-litre capacity).
- Add vegetable stock and honey.
- Put a lid on and bring to boil.
- Once the water has started to boil, add your alphabet pasta and cook for 5 minutes.
- Add vegetables and cook 5 minutes more or until the potatoes are tender.
- Be careful the pasta does not cook too long and go out of shape.
- Turn off heat, and stir in parsley and serve with crusty wholegrain bread.
