This soup is always a favourite with children and adults alike – who don't like digging around in your soup to see if you can spell your name on the side of your soup bowl! There are times when it is OK to play with your food – this is your opportunity!
Course Main Course
Servings 4 servings

Ingredients
  

  • 1 litre hot water
  • 4 tsp vegetable stock
  • 1 tbsp honey
  • 3 tbsps alphabet pasta shapes or animals – that's all I could find
  • 1 med brown onion diced small
  • 1 celery stick diced small
  • 1 carrot peeled and grated
  • 1 potato peeled or scrubbed & diced small about one cm cubes
  • 1 tomato diced small
  • 2 tbsp parsley chopped

Instructions
 

  • Put the hot water in a large pot (2-litre capacity).
  • Add vegetable stock and honey.
  • Put a lid on and bring to boil.
  • Once the water has started to boil, add your alphabet pasta and cook for 5 minutes.
  • Add vegetables and cook 5 minutes more or until the potatoes are tender.
  • Be careful the pasta does not cook too long and go out of shape.
  • Turn off heat, and stir in parsley and serve with crusty wholegrain bread.
