Our Minestrone Soup is packed with a colourful array of vegetables, including potatoes, courgettes, carrots, onions, garlic, green beans, and celery. Potatoes offer a good source of potassium and vitamin C, while carrots are rich in beta-carotene, which is converted into vitamin A in the body, supporting vision and immune function. To enhance the savoury goodness of our Minestrone Soup, we simmer these vegetables in a flavorful broth made from tomatoes, Italian herbs, and vegetable stock. Tomatoes are rich in lycopene, a powerful antioxidant linked to numerous health benefits, including reduced risk of heart disease and certain cancers. Ingredients
  

  • 1 med brown onion diced
  • 2 med carrots diced
  • 2 med celery sticks diced
  • 2 med potatoes cubed
  • 1 courgette (zuchinni) diced
  • 12 green beans stakes removed and halved
  • 4 garlic cloves minced
  • 2 cups baby spinach
  • 2 tsp worcestershire sauce
  • 3 tbsp tomato paste
  • 2 tsp italian mixed herbs
  • 2 cans crushed tomato
  • 4 cups vegetable stock
  • 2 cups water
  • 2 bay leaves
  • 1 cup wholemeal penne pasta

Instructions
 

Pressure cooker

  • Set pressure cooker to suate, with a little water saute the onion and garlic until onion is transparent.
  • Add all other ingredients and set the pressure cook to the soup. Once cooked, depressurise, remove the bay leaves and enjoy.
  • It's that easy 🙂

On cooktop

  • In a stockpot, use a little water to saute the onion and garlic, until the onion is transparent.
  • Add in all other ingredients. Bring to a boil, then simmer with a lid partially on for 25 minutes or until the pasta is al dente and the potato is soft.
  • Remove the bay leaves and serve with cracked pepper over the top.
