Hearty Health Chunky Tomato Soup is a delicious and nutritious blend of ripe tomatoes, savory vegetables, and spices.
It creates a comforting meal that’s low in calories and high in flavour. Each spoonful is packed with essential vitamins and minerals, making it a perfect choice for a quick lunch or dinner. Enjoy it on its own or pair it with crusty wholemeal sourdough bread for a satisfying experience!
Course Soup
Servings 6 servings

Ingredients
  

  • 1 lrg leek sliced
  • 2 cloves garlic minced
  • 2 med carrots diced
  • 1 small parsnip diced
  • 5-6 med potatoes sliced
  • 6 button mushrooms sliced
  • 2 cans crushed tomato
  • 2 cups vegetable stock
  • 1 cup water
  • 1 tbsp italian mixed herbs
  • 1 tsp baking soda to reduce acidity

Instructions
 

  • In a large stockpot, saute the leek and onion in a little water until the leek softens and the water evaporates.
  • Add all other ingredients. Bring to a boil, then simmer for 20-25 minutes or until the potatoes are soft.
  • Using a stick blender, blend until the consistency is creamy but not all chunks are dissolved.
  • Serve warm with chunks of wholemeal sourdough
