Chunky Tomato Soup
Ingredients
- 1 lrg leek sliced
- 2 cloves garlic minced
- 2 med carrots diced
- 1 small parsnip diced
- 5-6 med potatoes sliced
- 6 button mushrooms sliced
- 2 cans crushed tomato
- 2 cups vegetable stock
- 1 cup water
- 1 tbsp italian mixed herbs
- 1 tsp baking soda to reduce acidity
Instructions
- In a large stockpot, saute the leek and onion in a little water until the leek softens and the water evaporates.
- Add all other ingredients. Bring to a boil, then simmer for 20-25 minutes or until the potatoes are soft.
- Using a stick blender, blend until the consistency is creamy but not all chunks are dissolved.
