Plant-Based Bread Pudding
Ingredients
- 4 cups whole wheat brown bread (preferably a few days old) broken up into small chunks
- ¼ cup ground flaxseed
- ¼ cup maple syrup
- ¼ cup apple sauce
- 1 tbsp vanilla extract
- 1 tbsp ground cinnamon
- 1 tsp ground ginger
- 1 cup raisins
- ½ cup almond slivers
- zest from one lemon
Instructions
- Preheat oven 180°C (350°F)
- Cover a baking dish with the cut up bread
- In a large bowl, combine all other ingredients and mix until blended.
- Pour the liquid over the bread and allow to soak in for around five minutes.
