Plant-Based Bread Pudding

This plant-based bread pudding is a nourishing, comforting dessert that reimagines the classic bread and butter pudding with wholesome, vegan-friendly ingredients. Perfect for chilly evenings, it offers a warm, spiced, and satisfying experience while also being mindful of health, sustainability, and waste reduction.

The base of the pudding is made with whole wheat brown bread, ideally a few days old. Using older bread not only gives the dish better texture and flavour but also supports a zero-waste kitchen by reducing food waste. Whole wheat bread adds fibre, B vitamins, and complex carbohydrates, helping to keep you full and energised.

Instead of traditional dairy and eggs, this version uses ground linseed (also known as flaxseed), which acts as a natural binder while providing plant-based omega-3 fatty acids, lignans, and fibre — nutrients that support heart health, hormone balance, and digestive function. Apple sauce replaces butter or cream, bringing moisture and a mild sweetness, along with added vitamin C and antioxidants.

The natural sweetness is enhanced with maple syrup, a minimally processed sweetener that contains trace minerals like zinc and manganese. Warm spices like cinnamon and ginger not only bring depth of flavour but also contribute anti-inflammatory and digestive benefits. Vanilla essence and lemon zest add brightness and aromatic complexity, making every bite rich and layered.

Raisins and almond slivers provide texture, natural sugars, and additional nutrients: raisins are rich in iron and potassium, while almonds contribute healthy fats, vitamin E, magnesium, and protein. Together, these ingredients create a dish that’s more than just dessert — it’s a nourishing comfort food that can be enjoyed guilt-free.

Ingredients
  

  • 4 cups whole wheat brown bread (preferably a few days old) broken up into small chunks
  • ¼ cup ground flaxseed
  • ¼ cup maple syrup
  • ¼ cup apple sauce
  • 1 tbsp vanilla extract
  • 1 tbsp ground cinnamon
  • 1 tsp ground ginger
  • 1 cup raisins
  • ½ cup almond slivers
  • zest from one lemon

Instructions
 

  • Preheat oven 180°C (350°F)
  • Cover a baking dish with the cut up bread
  • In a large bowl, combine all other ingredients and mix until blended.
  • Pour the liquid over the bread and allow to soak in for around five minutes.
  • Bake in the oven for 30 mins
