Moroccan Chickpea Stew

Print Friendly, PDF & Email

The Moroccan Chickpea Stew is more than just a flavourful and satisfying dinner choice—it’s a powerhouse of nutritional benefits. Designed to delight the taste buds and warm the soul, this stew is perfect for those unexpected chilly spring nights. The array of ingredients, from red onions and garlic to Kumara (sweet potato), cumin seeds, chilli powder, turmeric, paprika, ground cinnamon, fresh thyme, chickpeas, diced tomatoes, spinach, raisins, and black pepper, creates a harmonious fusion of flavours and health-promoting elements.

Starting with red onions and garlic, these aromatic ingredients not only enhance the stew’s taste but also provide a boost to the immune system. They contain compounds that are known for their antibacterial and antiviral properties, ideal for fighting off those pesky seasonal bugs.

Adding Kumara, rich in vitamins, fibre, and antioxidants, contributes to the stew’s heartiness. Their vibrant orange colour signifies their high beta-carotene content, which is converted into vitamin A, essential for good vision and overall immune function.

Spices like cumin, chilli powder, turmeric, paprika, and ground cinnamon not only infuse the stew with a depth of flavour but also offer an array of health benefits. Turmeric, with its active component curcumin, is a potent anti-inflammatory and antioxidant, while cumin and chilli powder may aid in digestion and metabolism.

Fresh thyme, a herb known for its antioxidant properties, complements the dish while contributing to potential health benefits. It may have antimicrobial effects and help support overall health.

Chickpeas, the heart of this stew, are a fantastic source of plant-based protein, fibre, and several essential vitamins and minerals. They can assist in weight management, improve digestion, and support heart health.

Spinach, another nutritional gem, boosts vitamins and minerals, particularly iron, which is crucial for energy production and overall vitality. Raisins not only offer a touch of sweetness but also provide a dose of antioxidants and fibre.

Black pepper, the final touch, not only elevates the taste but also aids in nutrient absorption, explicitly enhancing the benefits of turmeric.

Enjoy its comforting warmth while knowing you’re nourishing your body with abundant, wholesome elements.
