Lemon Mint Fruit Salad is a bright, refreshing mix of seasonal fruit tossed with zesty lemon and fresh mint. Light, clean, and naturally sweet, it proves that sometimes the simplest combinations deliver the most vibrant flavour.

Servings 4 servings

Ingredients
  

  • rockmelon
  • watermelon
  • honeydew
  • kiwifruit
  • passionfruit
  • grapes
  • handful of mint
  • lemon

Instructions
 

  • Nothing too complicated here; cube up all melons into bite-size cubes.
  • Place them into a large serving dish and then pile around whole grapes, halved kiwifruit and passionfruit.
  • Squeeze across the salad half a lemon.
  • Finely chop a handful of fresh mint and generously sprinkle it over the salad.
  • Chill in fridge before serving.

Notes

The fruit selections are endless: banana, apple, orange, mango, berries of all colours, especially blueberries that are high in potassium and
vitamin C, pineapple, pear, peach, apricot, nectarine, pomegranate, to name a few. You can also look at sprinkling them with nuts like chopped peanuts or halved walnuts.
