Brown rice salad with Zesty Mustard–Gherkin Dressing

A vibrant, fibre‑rich salad that balances freshness, crunch, and whole‑grain nourishment

This Brown Rice Salad is the kind of dish that feels both grounding and uplifting — a colourful bowl built on chewy wholegrain rice, sweet bursts of cranberries or sultanas, juicy cherry tomatoes, and the crisp brightness of red capsicum. Finely chopped walnuts add a gentle earthiness and satisfying crunch, while fresh dill and mint bring a fragrant, garden‑fresh lift that makes every mouthful feel alive. Red onion ties everything together with a sharp, savoury edge that keeps the flavours balanced and bright.

What truly elevates this salad is the zesty mustard–gherkin dressing. A mix of lemon juice, wholegrain mustard, Dijon mustard, diced gherkin, and a touch of maple syrup creates a tangy‑sweet coating that clings beautifully to the rice and vegetables. It’s bold without being heavy, refreshing without being sharp — the kind of dressing that wakes up the palate and turns simple ingredients into something memorable.

Health Benefits

This salad is built entirely from whole, nutrient‑dense ingredients that support long‑term wellbeing:

  • Brown rice provides slow‑release carbohydrates, B‑vitamins, and gut‑supportive fibre, helping maintain steady energy and digestive comfort.
  • Walnuts contribute plant‑based omega‑3s, supporting heart and brain health while adding satisfying texture.
  • Cranberries or sultanas offer natural sweetness along with antioxidants and polyphenols that support cellular health.
  • Fresh herbs like dill and mint bring anti‑inflammatory compounds and digestive benefits, while adding vibrant flavour without extra salt or oil.
  • Lemon and mustard in the dressing provide acidity that aids digestion, while the gherkin adds probiotics from fermentation (depending on brand).
  • No refined oils keep the salad light and heart‑friendly, relying instead on whole ingredients for richness and flavour.

Why this salad works

It’s versatile enough to serve alongside hearty mains, yet substantial enough to stand alone for lunch. The combination of whole grains, fresh vegetables, herbs, and a lively dressing makes it a dish that feels nourishing, energising, and deeply satisfying — the kind of everyday recipe that supports a whole‑food lifestyle with ease.
