A vibrant, spice‑infused potato dish gently cooked with turmeric, cumin seeds, asafoetida, and curry leaves to create deep, aromatic flavour while supporting digestion and gut balance. Finished with fresh coriander, these tender potatoes offer a soothing, fibre‑rich, plant‑powered boost for everyday wellness.

Ingredients
  

  • 2 kg potatoes peeled and cut into medium chunks (4 lb 6 oz)
  • 1 tsp ground turmeric
  • 1 tsp cumin seeds
  • ½ tsp asafoetida (hing)*
  • 8-10 curry leaves
  • ½ bunch fresh coriander (cilantro) roughly chopped, to garnish (optional)
  • sea salt to taste optional

Instructions
 

  • Steam the potato in a steamer basket suspended over a saucepan of simmering water until tender.
  • Heat a non-stick frying pan over medium heat and toast the cumin seeds until fragrant. Add a little water, if needed, to stop them from burning.
  • Add the remaining spices, followed by the steamed potato and mix gently to prevent the potatoes from breaking down.
  • Season to taste with salt and garnish with fresh coriander.
