Ingredients
  

Quinoa Pudding

  • 1 cup quinoa
  • 1 cup water
  • 3 cups plant based milk
  • 2 cinnamon sticks
  • ¼ orange juiced
  • 2 orange peels
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract

Mango Puree

  • cups frozen mango
  • 2 tbsp maple syrup
  • ¾ cup water

Instructions
 

Quinoa Pudding

  • Rinse the Quinoa several times.
  • In a large pot, add all the Quinoa pudding ingredients. Bring to a boil and then simmer with the lid on for 30 minutes, stirring occasionally to prevent sticking.
  • Remove from heat, take out the orange peel and cinnamon sticks, and allow to cool slightly before splitting them into your serving dishes and placing them in the fridge while we puree the mango.

Mango Puree

  • Blend all ingredients in a highspeed blender until smooth. Add more water if necessary.
  • Add the pureed mango to the top of the quinoa and place back into the fridge until serving.
