Pea and Potato Soup

Pea and Potato Soup is a hearty and comforting dish made from tender green peas, creamy diced potatoes, and aromatic vegetables like onion and garlic, all simmered in a flavorful vegetable broth infused with fresh thyme and rosemary. - 2 cups green peas fresh or frozen
- 3 large potatoes diced
- 1 brown onion diced
- 4 cups vegetable stock (broth)
- 2 cloves garlic minced
- 1 tsp fresh thyme and rosemary
- pepper to taste
Sauté onion and garlic in a pot with vegetable stock until soft.
Add potatoes and stock, bring to a boil.
Add peas and herbs, and simmer until potatoes are tender, about 15 minutes.
Blend until smooth and season with pepper.
