Pea and Potato Soup is a hearty and comforting dish made from tender green peas, creamy diced potatoes, and aromatic vegetables like onion and garlic, all simmered in a flavorful vegetable broth infused with fresh thyme and rosemary. Perfectly seasoned with pepper, this soup is warming, nutritious, and easy to make!

- 2 cups green peas fresh or frozen
- 3 large  potatoes diced
- 1 brown onion diced
- 4 cups vegetable stock (broth)
- 2 cloves garlic minced
- 1 tsp  fresh thyme and rosemary
- pepper to taste
- Sauté onion and garlic in a pot with vegetable stock until soft. 
- Add potatoes and stock, bring to a boil. 
- Add peas and herbs, and simmer until potatoes are tender, about 15 minutes. 
- Blend until smooth and season with pepper.
