Indulge in guilt-free Easter treats with these Bliss Mint Chocolate Easter Eggs. A delightful blend of raw cashews, sweet pitted dates, rich cocoa powder, and refreshing peppermint essence, all rolled together and topped with crushed freeze-dried strawberry crumb for an extra burst of flavour and colour. Perfect for a wholesome, festive snack!
- 1 cup raw cashew nuts
- 20 pitted dates
- ¼ cup cocoa powder
- 2 tbsp ground linseed (flaxseed)
- 1 tsp peppermint essence
- freeze dried strawberries crushed
- Blend all ingredients (except the freeze-dried strawberries) in a high speed blender until combined. 
- Using an easter egg mould or desert spoon shape the batter into 6-8 eggs.  
- Leave to set in the fridge overnight.  
- When serving, sprinkle each egg with the crushed freeze dried strawberries.
