- ½ cup chickpea flour
- 2 tbsp maple syrup
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ¾ cup plant-based milk
- 1 tsp vanilla
- 4 slices wholemeal toast
Sieve all dry ingredients into a large bowl, mix well.
Add the maple syrup, plant-based milk and vanilla essence and fold into the dry ingredients.
Pour the mix into a shallow bowl wide enough to take the bread.
Heat a non-stick pan or an omelete maker.
Put wholemeal bread into mix and let it soak for at least 10 mins each side
Move the bread onto the pan and heat through for around 5 mins, then turn.
Serve with a drizzle of maple syrup and top with fresh or frozen berries - defrosted of course :-)
