Equipment

  • 1 non-stick frying pan

Ingredients
  

  • ½ cup chickpea flour
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¾ cup plant-based milk
  • 1 tsp vanilla
  • 4 slices wholemeal toast

Instructions
 

  • Sieve all dry ingredients into a large bowl, mix well.
  • Add the maple syrup, plant-based milk and vanilla essence and fold into the dry ingredients.
  • Pour the mix into a shallow bowl wide enough to take the bread.
  • Heat a non-stick pan or an omelete maker.
  • Put wholemeal bread into mix and let it soak for at least 10 mins each side
  • Move the bread onto the pan and heat through for around 5 mins, then turn.
  • Serve with a drizzle of maple syrup and top with fresh or frozen berries - defrosted of course :-)
