Ingredients
  

  • 1 ½ cups oat flour or rolled oats blended into fine flour
  • 1 cup rolled oats
  • 1 ½ tsp ground nutmeg
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground allspice
  • 2 ½ tsp baking powder
  • 1 cup plant-based milk (I used oat)
  • 1 cup unsweetened apple sauce
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup apple, cored and diced

Instructions
 

  • Preheat oven to 180°C (350°F).
  • Blend 1 ½ cups rolled oats in food processor until you have a smooth flour consistency.
  • Add all dry ingredients to a bowl (oat flour, rolled oats, spices and baking powder). Then in a separate bowl whish together all wet ingredients. (plant-based milk, apple sauce and vanilla).
  • Mix the wet ingredients into the dry mix until smooth. Then allow to sit for 10 mins to let the oats expand.
  • Finally fold in diced apple into the batter. Place mixture into 12 even muffin tray cups.
  • Bake for 25 minutes.
