Cinnamon Apple Oat Muffins

- 1 ½ cups oat flour or rolled oats blended into fine flour
- 1 cup rolled oats
- 1 ½ tsp ground nutmeg
- 1 ½ tsp ground cinnamon
- ½ tsp ground allspice
- 2 ½ tsp baking powder
- 1 cup plant-based milk (I used oat)
- 1 cup unsweetened apple sauce
- ¼ cup maple syrup
- 1 tsp vanilla extract
- 1 cup apple, cored and diced
Preheat oven to 180°C (350°F).
Blend 1 ½ cups rolled oats in food processor until you have a smooth flour consistency.
Add all dry ingredients to a bowl (oat flour, rolled oats, spices and baking powder). Then in a separate bowl whish together all wet ingredients. (plant-based milk, apple sauce and vanilla).
Mix the wet ingredients into the dry mix until smooth. Then allow to sit for 10 mins to let the oats expand.
Finally fold in diced apple into the batter. Place mixture into 12 even muffin tray cups.
Bake for 25 minutes.
