Balsamic Roasted Mushroom

Balsamic roasted mushrooms offer a healthy alternative to oil-based roasted mushrooms. This recipe involves marinating fresh mushrooms in balsamic vinegar and seasoning them with herbs before roasting. The result is a flavorful, tender, and slightly caramelized dish that's perfect as a side or topping for various meals.

- 3 cups button mushrooms
- 3 tbsp balsamic vinegar
- 2 tbsp soy sauce select the low salt version
- 3 cloves garlic minced
- ½ tsp fresh thyme chopped
Preheat oven at 200℃ (400℉)
In a large bowl, oss the mushrooms into the other ingredients.
Line an oven-roasting pan and arrange mushrooms in a single layer.
Roast until soft, around 15 - 20 minutes. Baste halfway through and if dry, add a little water to the base of the pan.
Serve as a side dish or on top of your favourite plant-based meal.
