This incredibly moist bread is not only oil-free but super super delicious. Its exceptional taste and texture make it a delightful treat for both the taste buds and the waistline. By omitting oils commonly found in traditional baked goods, this offers a lighter option while still delivering the wholesome goodness of fresh apples and the aromatic warmth of cinnamon. So, you can relish every bite guilt-free and savour the fusion of flavours that make it an irresistible favourite.

Ingredients
  

Bread

  • 2 cups whole wheat flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ cup unsweetened apple sauce
  • 1 cup plant milk (I used soy)
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • ½ tbsp cinnamon powder
  • ½ tsp nutmeg
  • 2 cups peeled and grated apples
  • ¼ cup walnuts
  • ½ apple, sliced thinly for top of bread

Lemon glaze

  • 1 tbsp rice syrup or maple syrup
  • 1 tbsp lemon juice

Instructions
 

  • Preheat oven to 180°C (350°F)
  • Combine all ingredients except for the sliced apple into a bowl and gently fold over until all the flour is mixed in, don't overmix.
  • Pour the batter into a silicon bread pan or a lined pan.
  • Place the sliced apples on top and sprinkle with cinnamon.
  • Cook for 45 mins, then pierce into the loaf with a fork, if it doesn't come out clean continue baking for a further 5 mins.
  • Baste with the lemon glaze while the bread is still warm.
  • Leave to cool before slicing up.

Notes

Keep the apple peelings from the grated apple to munch on as you wait for the bread to cook 🙂
