This is brilliant both hot or cold. For desert or breakfast. With plant-based milk or on its own. Very easy to make and full of flavour.
• 1 large tin of Apple slices or 3 large apples (sliced)
• 1/4 cup cranberries (or raisins)
• 1/4 cup Walnuts, chopped
• 2 tsp ground cinnamon
• 1 large ripe banana
• 2 tsp vanilla
• 2 Tbsp shredded coconut
• 1 tsp ground cinnamon
• 1/4 tsp ground nutmeg
• 1 cup of wholegrain oats
• rind from one lemon
Preheat oven 180°C (350°F)
Just mix all ingredients together and pour into baking dish
In a bowl mash the banana then add all other ingredients, mix, then add to the top of the filling.
Bake for 30 mins and serve either hot or cold with a little plant-based milk for breakfast or desert.
